If you love Avocados...Try this dish!
This was a winning dish from a participant in the Earth Balance Spring to Life Recipe Contest. I made it tonight..FINALLY! It was on my list for last week but didn't get to it. Super creamy, super healthy and super deliciousness!! Check out the winner's blog HERE:
Whole Grain Pasta with Creamy Avocado White Wine Sauce
16 ounce(s) of Whole Grain Pasta (can substitute gluten-free, too)
4 Avocados
8 ounce(s) of Vegan Cream Cheese (if you aren't Vegan then reg. cream cheese will work)
1/4 tsp. of Cayenne Pepper (or more to taste)
2 tbsp. of Fresh Basil, finely chopped
1/2 tsp. of Pepper
1/2 tsp. of Salt
1/4 cup(s) of Earth Balance® Vegan Buttery Sticks
1 Medium Sweet Onion
1 Garlic Clove, minced
1/2 cup(s) of Dry White Wine
1 Small Tomato (roma) diced
1 cup(s) of Vegan Cheese (italian) (Or Parm. cheese would be nice too if you aren't vegan)
1/4 cup(s) of Pine Nuts
Directions
1. Cook pasta according to package instructions.
2. Combine avocado, vegan cream cheese, cayenne pepper, basil, black pepper, and salt in a bowl. Blend with a hand mixer until smooth. Set aside.
3. Saute onion and garlic in vegan butter until translucent. Add white wine and increase heat to medium and cook until most of the wine has evaporated. Remove from heat and combine with avocado mixture.
4. Pour sauce onto pasta and garnish with shredded vegan cheese, pine nuts, fresh tomatoes and enjoy with a nice glass of white wine!

First 5K
Saturday Rob, Jackson & I ran in our first 5K as a family. It really was a lot of fun....ok at times it was hard for me because I am NOT a runner yet. Jackson had fun and I think it'll be a great thing for us to do as a family. Rob is my inspiration when it comes to running. He just started running last June and has already ran a half marathon and signing up for possibly 2 marathons this fall already. 5K is NOT quite to a marathon yet..but we'll get there :)

Operation Renovation
We are renovating our house...after back and forth (multiple times!!!) we have decided to stay in our home and MAKE it our dream home...well close to it anyway! :)
We will be redoing the flooring ALL of downstairs, new Master bedroom furniture and redesign (moving Rob's office into our Master...but in a fun, stylish, not TOO "officey" way), new kitchen backsplash, wall mounting both TVs, new living room sectional, re-tiling fireplace surround, and installing a sprinkler system. Okay, PHEW that was exhausting just typing it all out. We had a lot of this on our list before we put the house on the market last Fall, but now we're staying here...so lots of catching up to do! I'm going to be keeping my blog updated with our progress.
Today I'll just show a VERY small project in the making for 2 years. I FINALLY got my glass shelf in our bathroom. Don't ask me why it took so long, but it did...and now its done. Simple, easy to do, happy its done.
