Tacos!! Davis Style

Just because we have cut out meat, doesn't mean we can't have taco night!!  Here is our version of tacos if you'd like to try.  Great way to eliminate meat fats etc.  You can't really taste the difference!!

Go to the store and pick up some Boca Soy Crumbles.  I got mine this week using double coupons on each of my bags.  Instead of $2.69 ea. I snagged them for $.69 ea.!!  Much cheaper than ground beef or turkey and much healthier.
13g Protein, 3g Fiber, 0mg cholesterol, 0g trans fat

In a skillet, heat up the ground crumbles, about 5-6 minutes.  Stir in some of my Taco Seasoning, found here.
This is what is looks like:
  
Then stuff a little of the "meat" into these great shells from Whole Foods.
Only .5g Sat Fat in 2 shells. 120 Calories for 2

Then add some of your favorite fixins!  We like tomatoes, lettuce, avocado, cheese (very light), homemade salsa, and sometimes some light sour cream

Below is the ONLY thing I hate about cooking in so much...dishes!  Thinking I need to pull up a stool to my sink for as much time as I spend there.  


Yummo Tilapia--Thanks to Jen!

I can't claim this great recipe.  My good friend Jen's mother makes this and Jen passed it along!  This will NOT disappoint.  We have been rotating all our new recipes lately so that explains the lack of new ones on here.  We are gearing up to try some more new ones so more to come!


1 lb. tilapia filets
2 to 3 fresh Roma tomatoes
fresh parsley
Seasoned Panko crumbs
Olive oil
2 - 3 med. garlic cloves
Italian Seasoning
fresh lemon juice

Preheat oven to 375.

Chop tomatoes into small chunks, stir in 1 to 2 T. olive oil, crushed garlic cloves, chopped parsley, sprinkle with italian seasoning, squeeze juice of 1/4 of lemon into mixture.  Stir, let it sit while preparing tilapia.

Spray the bottom of a glass baking dish with oil. Lay tilapia filets on pan, lightly  drizzle with olive oil, spread oil over filet with a spoon or spatula. Sprinkle with panko crumbs to cover.
Spread tomato mixture on top of tilapia filet.

Place in oven and bake for 30 minutes until bubbly and beginning to brown.

Remove from oven and serve with any starch and veggies you like!  We served it over some quinoa and side of broccoli.  THANKS JEN!!

Belly up to the Bar...

....or Kitchen Table

Jackson has now joined us at the kitchen table and in a booster seat!  He is REALLY liking his new spot. Dinner time is so much better now it seems.  Jackson is exiled to the corner of the kitchen and we feel like a happy little family of 3!
Jackson has his very own place mat (which I strategically double side taped down!) and is eating like a big boy.

Date Night

While it may not REALLY deserve its on blog post, we were both VERY happy to be able to get a date night out without the little guy this week.  It had been 2 months!! Jackson is pretty good when we go out so we end up taking him out with us for our once a week dinner out instead of getting a sitter.  Grammie & Grampie are FREE sitters so we took advantage!

Park Time with Grammie & Grampie

What a FUN time we had with Grammie & Grampie.  They drove over and we had some great times!  Jackson had a blast and was go, go, go.  Here are some fun shots we got at the park with them the day they got here! Our house was full of LOTS and LOTS of giggles while they were here.  Very sad when they left yesterday.

Missing in ACTION

We have been so busy lately and I haven't caught any of the action with my camera!!  I can't find the charger for my small camera and Jackson is a handful enough that loading up my DSLR camera everywhere we go is just too much!

Grammie & Grampie are coming to visit this Saturday so I'll be sure to snap away and load some new pics shortly!

Jackson has been playing hard lately and having a great time.  He is running now...and quick!  He talks ALL day long I'm just not sure what he is saying! He is very adamant about it though!  Here are some new fun things he is saying/repeating or doing

- Bird, in a very high pitch voice
- Dude (thanks to Rob)
- Signs airplane EVERY time he hears a plane fly over!
- Doing the FSU Seminole chop (complete with war chant!)
- Has said "Jackson" a couple times
- Blows kisses when you say I love you
- Likes to play peek-a-boo
- Comes up with new dance moves ALL the time! Will try to get a video of this SOON
- is really trying to say SO many things every day.  He is fascinated with new sounds and is becoming a little mimic of words AND mannerisms!
