Jackson Loves his Daddy!

If you've ever been around Rob & Jackson you know how much these two ADORE each other. It is so much fun to watch them interact. 
For Father's Day we headed out to Moorhead's Blueberry Farm in Conroe, TX for blueberry pickin' fun!  Jackson really enjoyed picking eating the blueberries!  We went very first thing in the AM but it was still pretty hot.  We only got 2.5 lbs this trip but we made some great memories and have some good photos.  I know, I know...my blog is PHOTO HEAVY but I just can't chose so hope you enjoy lookin at them!

8 Months Old



At 8 Months Old, Jackson:
- You weigh 22lbs 0 oz.
- You are crawling EVERYWHERE
- You are pulling up things and finding LOTS of new cool things around the house you didn't notice before.
- Are still a great sleeper
- You love paper!!  you found mommy's tissue paper stash and love attacking my grocery list
- Wear Size 4 Diapers.  Its not that your too chubby buddy but size 3 weren't long enough for your tall frame.  Don't want to give you a complex.
- You enjoy the new world of finger foods amd very good at it
- Enjoy drinking waterout of your sippy cup
- You flirt flirt flirt! You love smiling at people and showing off.
- Still love swimming (well trying to drink the water anyway)
- Figured out your crib is also a great place to play, not just sleep
- You say Mama when you want me to come get you. Says Dada a lot when you are playing
- You are quite the squealer amd talker now,  You put a lot of different sounds together now but we still don't understand exactly what you're telling us.

And....He's Off!!

So Jackson officially became a CRAWLER today.  He had done a couple "crawl steps" here and there but this morning he took off while we were Skyping with Grammie! Jackson discovered EVERYTHING in just one day: the outlets (outlet covers, check), entertainment center doors (thingy bob's to keep doors shut, check), my shoes (YUCK!), and the walls (trying to find a way to pull up on this flat service!).

After bathtime Mommy put some lotion on J's poor knees...total RUGBURN due to non-stop crawling from 4PM-5:30PM.

Jackson will be 8 Months Old in 4 days.  Who knows where he will crawl next and what objects he will be pulling up on by then!!

Big Boy Bath

Jackson is eating more "big people" food now and enjoying self-feeding.  Tonight he had a banana just mashed (bye bye purees) and some pasta.  For his veggies he is still getting some purees but we are moving to finger foods and just gently mashed foods that we can.  He would MUCH rather eat finger food than us feed him with a spoon right now.  The point of that was to say that he now gets messy eating and eats with no clothes on (when we are @ home).  Makes clean up a breeze!!!

So...what do big boys do after a messy dinner??  Take a bath in the BIG BOY tub!!!  Tonight was his first night in the big boy tub.  We kept using the other baby tub to keep him confined but he really outgrew it.  Man did he enjoy having all that room and trying to climb out!  Excuse the MANY pictures below....we had to document the evening's events!!!

Bye bye Daddy Rob...we'll miss you this week!!

Almost...........

Jackson is trying REAL hard to crawl.  He crawled 2 "steps" today.  Not sure what you call it but he moved his legs and arms twice going forward (non-army crawl) and we were holding our breath.  He is scooting MUCH faster and getting into things.  Here are some shots from today but a lot of blurs as he was "on the move".  Daddy doesn't want to miss this big event while he is gone next week...so maybe tomorrow??

Dinner @ Home, Nights 3, 4, & 5

So I'm behind on the Dinners Posts :)
Rob is out of town this next week but after he gets back I'm going to be documented SOME, not all of our new recipes we are trying out.

Night #3
Creamy Chicken & Cheese Pasta Bake. 
Rotini Pasta+ Broccoli+ Chicken+3 Different Cheeses+Oven=YUMMY

1 and 1/2 cups rotini pasta
1 small bunch brocoli, cut into florets
1 lb boneless skinless chicken breasts, cut into bite-size pices
1/2 cup chicken broth
2 oz cream cheese, cubed
1 cup shredded mozzarella cheese
2 tbsp grated parmesan cheese

Cook pasta as directed on package, adding broccoli for the last 3 minutes. Drain. Meanwhile, heat large skillet on medium-high heat. Add chicken; cook 3 minutes or until no longer pink, stirring frequently. Stir in broth; simmer 3 minutes. Add cream cheese; cook and stir on low heat until melted. Stir in 1/2 cup mozzarella. Add pasta and broccoli to chicken mixture and mix lightly. Spoon into 8 inch square baking dish. Cover with remaining mozzarella and parmesan. Cover with foil and freeze. Thaw in refrigerator overnight. Bake covered at 375 degrees for 30 minutes. Bake uncovered an additional 10 minutes. Let stand 5 minutes before serving.

Our Cruise...5/15-5/22

Well...we had a GREAT time.  That sums is up!  End of post...

Ok, ok, I know many are asking for details and info about what we did so guess I'll have to put a little more effort into it.

JAMAICA
We climbed up Dunn's River Falls in Ocho Rios and went to Prospect Planation where we did a nature walk, fed some camels, and then a bikeride!  We made sure to climb the Falls because my parents went there and climbed those same Falls when they were on a cruise for their 25th anniversary 12 years ago.  It was great to be able to do that and get the same picture taken that they did!





GRAND CAYMAN
Let me first start by saying what a BEAUTIFUL place.  We definitely want to go back and explore this island a little more. We set off on a kayak adventure with a very friendly guide.  He shared a lot of history of the island and the habitat.  It was quite the workout but an amazing view!  Sure beats the gym!!!!  We kayaked along the shoreline and then went out further to the reefs.  We got in and snorkeled a bit around the reef.  We even got Rob in the water and snorkeling!! It was such a fun time together!

COZUMEL
We decided to enjoy Cozumel in a more relaxed environment.  The excursion we chose was to go for an all inclusive beach day with some new friends of our's (Brooke & Brittany).  We laid out (with our 50SPF), paddle boated, pool time, drinks, food= FUN.  It was a nice relaxing time for sure!
